| Minty Barbecue Lamb Chops (serves 4) |

4 Lamb Chops 4 tablespoons of Olive Oil 1 tablespoon of finely chopped fresh
Mint 1 tablespoon of finely chopped fresh Rosemary Prepare the BBQ for cooking and mix together the olive oil, fresh mint and rosemary. Brush or dip the lamb chops in the oil mixture and leave to marinade for 30 minutes. Barbecue the chops over the hot coals until the juices run clear turning the meat frequently to avoid charring. Serve with a freshly made Greek salad with olives and feta cheese and a dollop of tzatziki. Robert suggests trying the local Makedonikos red, white and rosé wines which are widely available across in the island as the perfect complement to your meal. |
